Ingredients:

6 egg whites

½ tsp cream of tartar

140ml sugar

1 tsp vanilla extract

110ml flour (or 70ml flour + 40ml cocoa powder for chocolate cake)

1/3 tsp bicarb

1 ½ cups of sweetened whipped cream and chopped strawberries and nuts

Method:

Whisk the egg whites and cream of tartar till soft peaks form.

Gradually add 70ml of sugar and whisk till combined. Add the vanilla extract.

Sift and fold in the flour, 70ml sugar and bicarb.

Bake in a tube pan on 180°C for 40 minutes.

Slice cool cake in half. Fill and top with whipped cream and chopped strawberries and nuts.
