Ingredients:

6 egg whites

½ tsp cream of tartar

140 ml sugar

1 tsp vanilla extract

110 ml Flour (or 70 ml flour + 40 ml cocoa powder for chocolate cake)

1/3 tsp bicarb

1 ½ cups of sweetened whipped cream and chopped strawberries and nuts

Method:

Whisk 6 egg whites and half a tsp cream of tartar till soft peaks form.

Gradually add 70 ml of sugar and whisk till combined. Add 1 tsp vanilla extract.

Sift and fold in 110 ml flour (or 70 ml flour + 40 ml cocoa powder for a chocolate cake), 70 ml sugar, 1/3 tsp bicarbonate.

Bake in a tube pan on 180 degrees for 40 minutes.

Slice cool cake in half. Fill and top with 1 ½ cups of sweetened whipped cream and chopped strawberries and nuts.
