Crisp, buttery and light as air. Delicious with or without toppings.
Melt 180g of butter in a large bowl.
Separate two eggs.
Whisk the two egg yolks along with 1 ½ cup milk and 1 tsp of vanilla essence into the melted butter.
Add to the above:
2 cup sifted flour
3 Tbsp sugar
4 tsp baking powder
Mix till combined.
In a clean bowl, whisk the 2 egg whites till stiff peaks form.
Fold the egg whites into the batter.
Cook in a waffle iron till golden brown.
Serve hot with ice cream and sauces of your choice.
Keep leftover waffles in the freezer. Lightly toast in the toaster when ready to eat.
