Well worth the effort
Ingredient:
100g cream crackers
115g butter
½ cup brown sugar
¼ tsp vanilla essence
225g chocolate
2/3 cup chopped, toasted nuts
1 ½ cup vanilla ice cream
Method:
Line a 9 by 13 inch baking sheet with baking paper.
Lay out the crackers in a flat rectangle.
Bring the butter and sugar to a boil then stir while simmering for 2 minutes.
Stir in the vanilla.
Spread the caramel over the crackers in an even layer.
Bake on 180 degrees for 10 to 15 minutes .
Allow to cool.
Melt the chocolate and spread over the crackers. Sprinkle the nuts over the chocolate.
Freeze for 15 minutes.
Remove from freezer.
Gently cut the rectangle in half.
Spread your softened ice cream neatly over the bottom of one of the slab of crackers.
Place the second slab onto the ice cream and gently press down.
Return to the freezer for at least three hours.
Remove from the freezer and cut into squares.
