A classic biscuit with a bit of zing
Ingredients:
113g melted butter
¼ cup icing sugar
¾ tsp vanilla essence
1 cup flour
¼ tsp baking powder
¼ tsp ginger powder
1/3 cup finely chopped pecan nuts
1/6 cup finely chopped crystallized ginger
Method:
Mix the butter, icing sugar and vanilla essence together in a large bowl.
Add the flour, ginger powder, baking powder and nuts to the bowl and mix till combined.
Mix in the chopped ginger.
Form balls, 1 heaped teaspoon of dough each.
Bake on 170 degrees Celsius for 6-8 minutes.
While still warm, roll each biscuit in additional icing sugar.
