Simple but satisfying


170 g butter

225 g sugar

3 eggs

2 tsp vanilla essence

3 cups mealies (cut from around 4 cobbs)

¾ cup milk

225 g flour

3 ¾ tsp baking powder


Grease or line 2 small loaf tins with baking paper.

Liquidize the mealies and the milk together until finely ground.

Cream the butter and sugar together until light and fluffy.

Add the eggs one at a time then the vanilla essence. Beat till combined.

Sift the flour and baking powder together.

Add half of the mealie mixture to the butter mixture and beat.

Add half of the flour mixture, then the rest of the mealie mixture followed by the last of the flour beating after each addition.

Divide the batter between the two tins.

Bake on 180 degrees celcius for 30-40 minutes.

Alternatively, fill muffin cases ¾ full and bake for 15-20 minutes.
