Perfect for a relaxed holiday breakfast.
Ingredients:
1 cup milk
½ cup water
2 eggs
1 cup flour
1 tsp baking powder
1 tsp sugar
Pinch of salt
Nutella, caramel treat, golden syrup, chopped banana/strawberry, whipped cream.
Method:
Whisk the milk, water and eggs together in a large bowl till frothy.
Sift the flour, baking powder, sugar and salt together.
Gently whisk the dry ingredients into the wet ingredients until there are only a few lumps.
Heat a frying pan on high. Spray with non-stick spray.
Drop around 3 Tbsp of batter into the pan. Spread it out with a spatula until thin but not holey.
When you see bubbles, gently lift the pancake up with a large spatula and flip it over. Cook for 30 seconds or so and remove to a cooling rack.
Spread a filling of your choice over a pancake. Roll, fold or stack and enjoy.
