An unusually delicious take on sweet potatoes
Ingredients:
2 Tbsp butter
1 onion diced
2 tsp crushed garlic
1 Tbsp fresh ginger chopped
750g sweet potato, peeled and diced
1 litre vegetable stock
3 Tbsp peanut butter
Salt
Pepper
Handful of chopped dhania
3 Tbsp chopped chives
Lemon juice
Method:
Saute the onion, garlic and ginger in the butter until soft.
Add the sweet potato and stock. Bring to a boil and simmer until tender.
Add the peanut butter.
Puree till smooth.
Add salt, pepper and lemon juice to taste.
Stir in the dhania and chives before serving.
