A quick treat for any time of the week.
Combine:
2 ¼ cups flour
¾ cup sugar
1 Tbsp baking powder
½ tsp cinnamon
Whisk together:
1 cup milk
½ cup melted butter
1 tsp vanilla essence
2 large eggs
Dissolve 2 Tbsp instant coffee in 2 Tbsp hot water. Mix all the ingredients together till smooth.
Fold in ½ to 1 cup of chopped white chocolate or any chocolate of your choice. Fill cupcake liners ¾ full. Bake on 180 degrees for 15 minutes.
