Ingredients:

½ onion, diced

1 punnet mushrooms sliced

3 jalapeños sliced

½ cup corn

½ punnet cherry tomatoes

Handful of chopped spinach

2 tsp crushed garlic

1 tsp salt

1 ½ tsp lemon pepper

1 tsp mixed herbs

1 tsp fresh oreganum if you can get it or ½ tsp dry oreganum

1 tsp paprika

Black pepper

1 ½ cup milk

½ cup cream

2 Tbsp mayo

1 tsp maizena

250g pasta, cooked

A handful of cheese.

1 tsp lemon zest

1 tsp chilli powder

Method:

In a little olive oil, stir fry your onion, mushrooms and jalapeños till soft.

Add in the tomatoes, corn and spinach. Stir fry till tomatoes pop.

Add in the garlic and braise.

Stir in the spices.

Separately, combine the ingredients for the milk mixture. Add it to the vegetables and give it a quick boil.

Mix in your pasta, cheese, zest and chilli.

Taste and adjust seasoning as necessary.
