An easy meal to use up all your leftovers.
Ingredients:
4 slices of bread torn into small pieces
½ cup grated cheese
Around a cup of cooked meat/cold meat shredded or cubed
½ cup tomato chutney (or ½ tin tomato simmered with ¼ tsp chilli powder, salt, pepper and ½ tsp crushed garlic)
250g mushrooms or peppers or any other vegetable sliced and sautéed
Chopped spring onions/parsley/origanum
2 eggs
1/3 cup milk
½ tsp salt
Pepper
1 tsp green chilli
Pinch of baking powder
Additional cheese for topping
Optional – feta, sundried tomato, olives, pineapple.
Dried origanum
Method:
Mix together the bread, cheese, meat, chutney, vegetables and fresh herbs.
Place this mixture into a medium sized baking dish. Spread it out evenly.
Whisk together the eggs, milk, salt, pepper, chilli and baking powder.
Pour the milk mixture over the bread etc.
Top with additional cheese and anything else you want to. Sprinkle with the dried origanum.
Bake at 180 degrees celsius for half an hour. Cool before cutting.
