Perfect for a light meal on hot days.
Ingredients:
1 cup couscous
1 carrot grated
1 red pepper diced
1 green chilli chopped
Handful of mushrooms finely sliced
Handful of spring onion chopped
¼ onion finely chopped
Small handful of mint leaves chopped
Dressing
4 Tbsp orange juice
1 Tbsp lemon juice
1 tsp sugar
¼ cup olive oil
¼ tsp dry parsley
Salt and pepper to taste
½ cup toasted nuts chopped
Method:
Cook couscous according to your liking.
Combine with the chopped vegetables.
Whisk dressing ingredients together.
Mix into the couscous.
Garnish with the chopped nuts.
Serve at room temperature or chilled.
Some shredded chicken can be added to make a more substantial salad.
