Mealie Cake
Simple but satisfying
Ingredients:
170 g butter
225 g sugar
3 eggs
2 tsp vanilla essence
3 cups mealies (cut from around 4 cobbs)
¾ cup milk
225 g flour
3 ¾ tsp baking powder
Method:
Grease or line 2 small loaf tins with baking paper.
Liquidize the mealies and the milk together until finely ground.
Cream the butter and sugar together until light and fluffy.
